Bryn Kirk
Course Facilitator
Bryn is a veteran of the chocolate
industry having worked for nearly 10 years in a
research and product development capacity for Ambrosia
Chocolate Company in Milwaukee, Wisconsin.
She produced chocolate formulas for
such companies as Pillsbury, Nabisco, Good Humor,
ConAgra, Edy's, Mrs. Fields, and Quaker Oats, among
others.
She was trained as a taster on Ambrosia's
taste test panel and eventually moved up to running
the taste test panels for the new products developed
in the laboratory.
Bryn runs chocolate tasting educational
seminars and, her personal favorite, chocolate and
wine tasting seminars. She has performed these
as corporate events as well as fun parties in people's
homes.
From time to time Bryn teaches offline
as an adjunct biology laboratory instructor at Carroll
University in Waukesha, Wisconsin.
At CUO Bryn develops all of the lessons
and coaches the members of the
Primal Chocolate
Club.

Jeffrey Kirk
Chancellor of Chocolate
The definition of chancellor is,
"the honorary head of a university." Jeff
is only associated with chocolate due to his association
with Bryn. While Bryn was in the chocolate
laboratory Jeff's taste for chocolate progressed
from enjoying any chocolate or confectionary to
abandoning all except the finest quality dark chocolates.
Since Bryn started creating Chocolate
University Online lessons, Jeff has begun to appreciate
some milks and artisan chocolates. He also
enjoys pairing chocolates with wine and helping
to find those flavors that work great together.
For CUO Jeff runs the business side
of the operations. He edits and publishes
the lessons, while continually creating and enhancing
content for the website too.
