Black & White Cheesecake

Did you know that National Cheesecake Day is an unofficial holiday that takes place annually every 30th of July?

Such tradition, which is actually part of a large tradition of an array of food holidays, is not authorized by any presidents. Also, it sadly doesn't possess any congressional records to back its claim up.

However, we know all too well that thousands, or perhaps millions, of individuals from across the country have their own reasons to celebrate this delectable holiday anyway.

Origins of cheesecake date back as far as 770 BC when such treat, or at least something like it, was served to Olympic athletes. And we also know that the Olympics 2012 is currently ongoing, so it's a perfect time to have this dessert baked and served, regardless of what day it is today.

Black & White Cheesecake

• 1/2 cup marshmallow crème or 1 cup mini-marshmallows
• 9 ounce graham cracker crust
• 1 package unflavored gelatin
• 1/4 cup cold milk
• 3/4 cup milk, heated to boiling
• 16 ounces cream cheese, softened
• 3/4 cup sugar
• 1/4 cup unsweetened cocoa powder
• 1 teaspoon vanilla (optional)

Spread marshmallow crème or scatter marshmallows over bottom of prepared crust; set aside.

In blender, sprinkle unflavored gelatin over cold milk; let stand 2 minutes. Add hot milk; process at low speed until gelatin is completely dissolved, about 2 minutes. Add cream cheese, sugar, cocoa powder and vanilla; process at high speed until blended.

Gently pour into prepared crust and chill until firm, about 2 hours.

Enjoy! 🙂
