Chocolate Mint Brownies

Chocolate and mint never fails to make a good combination, whether it be used in drinks, candies, and so on. This time, we'll be using the choco-mint flavor in the treat we all love. Brownies!

Brownies can either be "cake-style" or "fudge-style." Cake-style is that with the consistency of a cake, only richer and denser. On the other hand, fudge-style, true to its name, is more like fudge than cake.

While sometimes used even in beauty products, mint is mostly utilized in the culinary department. It is often used in beverages, syrups, ice cream, and chocolate candies.

Chocolate mint is produced when mint flavoring, such as peppermint, spearmint, or crème de menthe, is combined with chocolate. Fun fact! We celebrate Chocolate Mint Day every 19th of February, as declared by the National Confectioners Association.

You can have this delectable treat for your afternoon tea, midnight snack, and dessert.

Chocolate Mint Brownies
 
Brownie
• 1/2 cup butter, softened
• 1 cup sugar
• 4 eggs
• 1 can (16 ounces) chocolate syrup
• 1 teaspoon vanilla extract
• 1 cup all-purpose flour
• 1/2 teaspoon salt
 
Filling
• 1/2 cup butter, softened
• 2 cups confectioners sugar
• 1 tablespoon water
• 1/2 teaspoon mint extract
• 3 drops green food coloring
 
Topping
• 1 package (10 ounces) chocolate chips
  (use mint chocolate chips if you like even more mint)
• 1/2 cup plus 1 tablespoon butter, cubed
 
Prepare a greased 9x13" baking pan.
 
In a large mixing bowl, combine butter and sugar, beating until light and fluffy. Add eggs, one at a time, beating well after each. Add the syrup and vanilla, continue beating. Slowly add the flour and salt, mixing well. Pour into the baking pan. Bake at 350°F for 30 minutes. The top of brownies will still appear moist. Cool.
 
Next make the filling. In a small bowl, cream together the butter and confectioners sugar. Add water, mint extract, and coloring until well blended. Spread over cooled brownies. Refrigerate until filling is firm.
 
To make the topping, combine chocolate chips and butter in a small pan or glass dish. Slowly heat on stove or in Microwave, stirring often.  Be careful to fully melt, but not burn.  Cool for 30 minutes, stirring occasionally. Spread over the brownie filling. Chill. Cut into bars.
