Cocoa Rum Balls

Since I just stumbled upon a photo of a pin-up girl captioned “I tried to make you a batch of rum balls, but now they’re just balls and I’m drunk,” I decided to make this the recipe of the week because it kind of cracked me up. And I like it when I crack up.

Rum balls are deemed the perfect indulgence for adults. These sweet and chewy no-bake cookies (or candies?) are crushed cookie crumbs, cocoa powder, confectioners’ sugar, light corn syrup (liquid glucose syrup), and rum, all rolled into balls.

As what their name basically implies, these treats have rum and given that they aren’t baked, the alcohol flavor and its kick are not lost. This cookie is just perfect for the holiday season.

Just keep in mind though that letting your kids lick off the cookie dough on your mixing bowl is a bad idea! Hehe

Rum Balls

• 1 3/4 cups vanilla wafer cookie crumbs
• 1 cup ground pecans
• 1 cup powdered sugar
• 1/4 cup cocoa
• 3 tablespoons light corn syrup
• 1/4 cup light rum
• 1/3 cup powdered sugar (for dipping)Mix all ingredients, except for 1/3 cup powdered sugar. Roll into one-inch balls. Roll balls in remaining powdered sugar to coat.

Enjoy! 🙂
