Yep, I know. This cake recipe sounds funny. However, just so you know, it is truly chocolaty, and moist. Yes, it has Miracle Whip in it. The stuff you slather on your sandwich or toss into your salad. Sounds funky? Yes. Decadent and absolutely delish? YES.

You can rest assured that you won’t taste Miracle Whip in the final cake. The cake is not too rich nor is it too sweet, but the icing contributes to the sweet chocolaty punch to it. It’s just plain heavenly.

Miracle Whip Cake

• 2 cups flour
• 3 tablespoons cocoa
• 1 cup sugar
• 1/2 teaspoon salt
• 1 cup Miracle Whip Salad Dressing
• 3/4 cup boiling water
• 1 1/2 teaspoons baking soda
• 1 teaspoon vanilla

Sift first four ingredients together 3 times. Put in mixing bowl and make a well in the middle. Put one cup of Miracle Whip Salad Dressing and 3/4 cup of boiling water to which has been added 1 1/2 teaspoons of soda and 1 teaspoon vanilla into the well you have made in flour. Mix well by hand. Bake in greased and floured layer cake pans (two 8-inch) or large glass pan. Bake at 350° for about 35 to 40 minutes, or until cake springs back when tested.
