Pies are one of the most loved American desserts. You can choose from an array of pie recipes. If you want a recipe that can guarantee an exquisite taste, you can opt for pecan pies.

Pecan pie has long been a staple of many holiday meals, but there’s no reason to limit your enjoyment to the holidays. 

If you are an avid fans of pecan pie, you will definitely love it with white chocolate and almonds. All the wonderful flavors mixed together will provide you with a taste of rich, soft, and creamy filling with an addition of a sweet white chocolate flavor along with the crunchiness of pecans and almonds at every bite.

This is the perfect recipe for gatherings, reunions, and other parties.  Just make sure to bring a copy of the recipe with you. Guests will surely ask you for a copy of this tempting treat!

White Chocolate Almond Pecan Pie

• 4 eggs, beaten
• 1 cup light corn syrup
• 2/3 cup sugar
• 3 tablespoons butter, melted
• 1 tablespoon vanilla
• 1 tablespoon almond extract (or to taste)
• 1 tablespoon chocolate extract
• 6 ounce white chocolate, melted
• 1 cup pecan halves
• 1 cup sliced or slivered almonds
• 9-inch pastry shell
 
Combine first eight ingredients; beat with an electric mixer until blended. Stir pecans and almonds into mixture. Pour mixture into pastry shell. Bake at 350° for 50-55 minutes.

Here’s an interesting recipe for a brownie within a pie.  Basically it’s a big round brownie in a pie crust.  Sounds like the best of two worlds.

Fudge Brownie Pie

• 1 9-inch unbaked pastry shell
• 1 cup semi-sweet chocolate chips
• 1/4 cup margarine or butter
• 14 ounces sweetened condensed milk
• 1/2 cup biscuit baking mix
• 2 eggs
• 1 teaspoon vanilla
• 1 cup nuts, chopped
 
Preheat oven to 350°.  Bake pastry shell 10 minutes; remove from oven.  Reduce oven temperature to 325°.  In saucepan, over low heat, melt chocolate chips together with margarine.  In large mixer bowl, beat chocolate mixture with remaining ingredients except nuts until smooth.  Add nuts.  Pour into prepared pastry shell.  Bake 35-45 minutes or until center is set.  Cool.  Serve warm at room temperature with ice cream if desired.

Pecan pie is one of those desserts that I always wonder if it’s worth the calories because there is no chocolate.

Today’s recipe is the solution.  Add chocolate to pecan pie and now it’s the best of both worlds with a great nut and chocolate combination!

Chocolate Pecan Pie

• 9-inch deep pie shell
• 2 tbsp butter
• ¾ cup semi-sweet chocolate, chopped
• 1 cup light karo syrup
• ½ cup light brown sugar
• 3 large eggs
• 1 tsp vanilla
• 1½ cups pecan halves
 
Melt chocolate and butter in microwave or double boiler and mix together.  Add light karo syrup, light brown sugar, 3 large eggs, and vanilla and whisk everything together.  Fold in the pecans.
 
Pour mixture into the pie shell, and place on center rack of oven for 45 minutes. Bake at 350.  Test with a toothpick for doneness.

In the summer, it’s too hot to heat up the kitchen by turning on the oven and baking.  I like to make non-baked desserts that are cool, refreshing and of course, chocolate.

Here is one recipe that is perfect and uses ingredients that I already have on hand…

Chocolate Cream Pie
 
1 cup semi-sweet chocolate pieces
1/3 cup milk
2 tbs. sugar
4 ounces cream cheese, softened
1 cup whipping cream
1 baked pie crust
 
Beat together cream cheese and sugar; set aside.  Heat chocolate and milk over low heat, stirring until melted; remove from heat. 
 
In a separate bowl, whip cream until soft mounds hold their shape.  (You can substitute a cup of whipped topping for the whipping cream if you prefer.) 
 
Beat in cream cheese mixture only until blended.  Beat in chocolate mixture just until color is uniform.  Turn into 9-inch baked pie shell (graham cracker, pastry, or crème de menthe).  Chill at least 2 hours before serving.  Garnish with shaved chocolate if desired.

I prefer to make a graham cracker crust because I keep lots of graham crackers around in the summer for making s’mores.

I like to garnish with mini chocolate chips.
