Chocolate Almond Morsels Recipe

I'm sure you know what I mean when I say... Sometimes it's easier to hold back when you can physically count exactly how many bites of dessert you're devouring.

If you're like me, add "late at night by the light of the fridge" to the end of that sentence.

Of course, we don't always need to keep track of such things. But, I'll say - it's harder to leave half a bowl of ice cream untouched than it is to limit yourself to just one or two chocolatey bites.

Know what I mean?

If you're still striving for that swimsuit-ready body this summer, it might be best to stick to sweet treats that you can count.

Measuring a cup of this or a half-cup of that can get tiresome and push you into that "if I don't measure it, it doesn't count" mentality.

This recipe for chocolate almond morsels will help satisfy your late night sweets craving, and give you the easy, tidy process of knowing just how many you've eaten.

Chocolate Almond Morsels

  • 8 1/2 ounces chocolate wafer cookies
  • 1 1/2 cups almonds, blanched & slivered
  • 1/3 cup almond flavored liqueur
  • 3 tablespoons corn syrup
  • Powdered sugar

In a food processor or blender, process the cookies and the almonds until finely ground. Add the liqueur and the corn syrup, and process to mix.

Line a large cookie sheet with wax paper. Spread about 1/2 cup of powdered sugar in a shallow dish, and dust your hands lightly with some additional powdered sugar.

Roll the almond mixture into 30 balls. Roll each ball in powdered sugar and coat completely. Place on the prepared cookie sheet and refrigerate for at least 8 hours until firm. Makes about 30.
