Chocolate Chip and Orange Muffins

There's something funny about muffins. They can be something nourishing that you eat in the morning, and they can also be an addictive dessert.

As a kid, I often requested muffins for breakfast. My mom always just thought I was trying to practice healthy eating at a tender age, and that I never wanted to leave home with my stomach empty, failing to realize I eat one muffin too many most mornings.

Muffins still hold a special place in my heart to date. I love them with my cup of Joe. I always pick ones with chocolate chips in them, though.

While these muffins certainly pass for a dessert, but between a a muffin and a cake, these bad boys are definitely the lesser evil. They have half the fat and much less sugar. You can opt for low-calorie, unsweetened almond milk, making them dairy-free, if you so wanted it.

Plus, this recipe has that intense orange flavor, paired with chocolate chips. Ah, the aroma itself is something else! These delectable orange chocolate chip muffins are light, moist, and everything you want a muffin to be.

Chocolate Chip and Orange Muffins

  • 3 cups all-purpose flour
  • 1 1/4 cups sugar
  • 2 teaspoons baking powder
  • 1 1/4 cups milk (or unsweetened almond milk)
  • 3/4 cup vegetable oil
  • 2 large eggs
  • 4 teaspoons orange peel, grated
  • 2 cups semi-sweet chocolate chips

Preheat oven to 350°. Line 1/2-cup muffin cups with foil liners.

Combine flour, sugar, and baking powder in large bowl. Make a well in the center of flour mixture.

In another bowl, mix milk, oil, eggs, and orange peel. Stir milk mixture into dry ingredients (mixture will be lumpy). Add chocolate chips to batter. Divide batter among muffin cups. Bake muffins until tester inserted into center comes out clean, about 20 minutes. Transfer muffins to rack. Serve warm or at room temperature.
