Chocolate Christmas Candies

Ah, the air is turning colder, the month ends in "ber", and surely the department stores are already making plans and clearing space for the big displays.  Yes, it's time to talk about Christmas!

As a kid, I was always giddy with butterflies in my stomach every time Christmas time was just around the corner. Who doesn't like Christmas?! Unless, of course, you have this weird idolatry with the Grinch. If that's the case, you better click your way out now. :p

I loved Christmas treats as much as I loved Christmas gifts, and I guess I'll never be able to outgrow that. But of course, what I loved (and still love) the most about this time of the year is getting together with the people I dearly love and care about. Eating food that I, by some means, helped prepare, talking and laughing with no pretensions. Ahhh... good times.

Sure, I have so much more to rave about Christmas, but I'll stick to what I'm here for. That, my little doves, is this recipe.

Chocolate Christmas Candies

• 1 cup butter or margarine
• 1/2 cup creamy peanut butter
• 2 1/3 cups graham cracker crumbs
• 2 cups powdered sugar, Sifted
• 2 cups flaked coconut
• 1 cup walnuts, chopped
• 1 cup chocolate (or chocolate candy coating)
 
Combine the peanut butter and butter in a 2-quart saucepan. Cook, over medium heat, stirring constantly, until melted. Remove from the heat. Combine the graham cracker crumbs, powdered sugar, coconut, and walnuts in a bowl. Pour the peanut butter mixture over all and toss until well blended. Shape the mixture into 1/2-inch balls. Place on waxed paper lined baking sheets. Cover with aluminum foil. Chill in the refrigerator.
 
Melt the chocolate in the top of a double boiler. Place over hot water and stir until melted. (For best results temper the chocolate before dipping, or use chocolate candy coating which requires no tempering.) Dip the balls in the chocolate. Place on waxed paper lined baking sheets and let stand until the chocolate is set. Cover with aluminum foil and store in the refrigerator.
