Congo Bars Recipe

If you’ve been reading my blog posts for any length of time, it would be pretty obvious I like baking. I can cook and make a more than decent meal alright, but without my precious butter, sugar, flour, and eggs, I’d be incomplete. Without chocolate, I’m lost and alone.

This recipe is something that I’m requested to bake time and again. Family, friends, neighbors, relatives… You name it, they all want a good big tray of these sumptuous treats.

You could say these are one of the most unforgettable cookies you will ever stumble upon. Yup, I just said “most.” I don’t like setting things in stone, but when these chewy squares come into the picture, I am bold.

If you don’t believe in magic, maybe these treats will have you rethink your life.

Congo Bars

  • 2 3/4 cups all-purpose flour
  • 2 1/2 teaspoons baking powder
  • 1/2 teaspoon salt
  • 3 large eggs
  • 2 cups brown sugar, firmly packed
  • 1 teaspoon vanilla
  • 2/3 cup vegetable oil
  • 1 cup chocolate chips

Sift the flour, baking powder and salt together, blending well. In a separate bowl, beat the eggs. Add the sugar, vanilla and oil to the beaten eggs. Stir in the dry ingredients. Add the chocolate chips. Spread on a greased jelly-roll pan, and bake for 15 to 20 minutes in a preheated 350° oven. Cool slightly before cutting.
