Kaoka Dark Chocolate with Fleur de Sel

Today’s review is a great tasting 70% dark chocolate bar from a company based in France called Kaoka. Kaoka grows their cacao in Ecuador, Peru, Dominican Republic, and Sao Tome. This particular chocolate is organic, non-gmo verified, fair trade, and single origin Santo Domingo cocoa from the Dominican Republic.

This is my first time eating a Kaoka chocolate. It’s an excellent bar. When you open the packaging, right away you’ll see printed on the inside is the story of this particular bar complete with varietal history, tasting notes, and regional influences on the growing area of this organic cocoa. 

As of my first bite, I quickly get hit with a salty, strongly roasted chocolate flavor that’s slightly woody with delicious delicate fruity red berry notes. Toward the end, I taste a nice nutty flavor with a hint of caramel. Very good.

Kaoka works together with more than 530 farmers' households in the Dominican Republic. They also partner with CONACADO which is an important cooperative of cacao producers. Many more details are available at the Kaoka website.

This is a must have chocolate bar! It’s worth the effort of tracking it down. (Search online for websites that sell the Kaoka brand. Or try this link to a 12-pack on Amazon). I got lucky and found this bar in a local health food store that imports unique and organic/fair trade chocolates.
