Moser Roth Dominican Republic 75% Cocoa

Previously, I wrote a review on a Moser Roth single origin milk chocolate sourced from Ghana. For today's review, this single origin dark chocolate bar is made from cacao grown in the Dominican Republic.

In recent years, the Dominican Republic exported roughly 62,000 tons of cacao, about 55% of that was organic. The country uses around 805,000 acres to grow organic crops.

Dominican cacao is highly sought after by chocolate manufacturers, especially in Europe. The beans have a high cocoa butter content that delivers great flavor and is considered a “gourmet” cocoa.

Yuck, They Used Alkalized Cocoa Powder!

As many of my readers know, I don’t really care for alkalized chocolate. And this bar has some added alkalized cocoa powder.

To me, the alkalized cocoa flavors (dark roasted toast with a bitter and astringent aftertaste) are unmistakable, and take away from the natural nuance flavors of the cacao.

Unfortunately, these flavors mask the fruity notes that should be prominent but are pretty much missing. I did enjoy the soft smoky, earthy and nutty notes of the chocolate right at the beginning though.

But It's Still Dominican Cacao

Don’t get me wrong, I liked the chocolate bar, just didn’t love it. This bar still has a lot going for it...

I like the level of cacao content, 75%, and the mouthfeel is smooth and creamy. The color is a lovely deep brown. The snap is crisp, and the aromas are rich in vanilla, spice, and tobacco.

I suspect this chocolate would pair well with almonds. I’ll have to test that idea!
