Peppermint Ice Cream Brownie Bars Recipe

Ice cream is my favorite - no matter if it's 85 degrees outside or 25. Here's a great recipe to enjoy your ice cream indoors this holiday season.

We'll start with chocolate brownies - your choice of the mix - something super fudge-y sounds good to me!

Then we'll add some white chocolate, peppermint ice cream, whipped cream and viola! A delicious frozen treat that's perfect for entertaining friends and family this holiday season.

Just remember not to be a scrooge and eat it all yourself!

Peppermint Ice Cream Brownie Bars

  • 1 box (for 9x13 pan) of your favorite brownie mix
  • 1 cup white chocolate chips (optional)
  • 1 container (8 ounces) Cool Whip
  • ¾ cup heavy cream
  • 8 ounces good quality white baking chocolate
  • 1 quart peppermint ice cream
  • Peppermint bark, or Andes mint peppermint crunch baking chips, coarsely chopped for garnish

Follow the instructions to prepare the brownies you've chosen. Optionally, add white chocolate chips to the batter before baking. Bake, following the instructions and allow to cool.

Using a small saucepan, bring the heavy cream to a boil. Once at a boil, remove from the heat and add in the white baking chocolate. Stir this until it is well-combined. Then, allow to cool for 5-10 minutes - it needs to still be pourable.

Top the cooled brownies with the white chocolate sauce mixture. To harden the white chocolate, put the whole pan in the freezer for about 20 min.

Next, top with peppermint ice cream, spread evenly over the hardened white chocolate.

Top it all off with cool whip, and sprinkle on the garnish.

Freeze for 4-6 hours, or until fully frozen (the dessert should be easy to cut through.). Serves 6 to 8.
