Chocolate Vodka with Dark Chocolate Covered Raspberry Creams

I recently made chocolate vodka, infusing it with cacao nibs (unsweetened, cracked and roasted pieces from the cocoa bean).
The chocolate impact was fantastic. The chocolatey flavor was authentic and bold since there was no added sugar to distract from the natural nuances of the cocoa notes.

I dream of summer - flip flops, big straw hats, and green grass. The downtown farmer's market is one of my favorite summer activities.
I enjoy walking the streets on a nice summer day, looking at all the fresh fruits and veggies displayed in a rainbow of colors. That's exactly what this fresh chocolate raspberry marbled cake recipe reminds me of.
Chocolate Raspberry Drink with Stevia

I recently attended an outdoor BBQ and at the “drink station” was a pitcher of ice water with an assortment of small bottles sitting next to it. Each bottle had a dropper style lid and inside was flavored liquid sweetened with stevia. The host encouraged me to create my own sugar-free beverage.
I was intrigued, of course, and poured myself a glass of water. Then, as instructed, put 6 to 8 drops of liquid flavoring into my glass. This was a starting point as more can be added according to individual preference.

Xyla Sugar-free Chocolate

I don’t have a dietary need to eat sugar-free chocolate, so I rarely do. I am not an expert when it comes to reviewing these types of product. I was thinking, however, that if something sugar-free tastes pretty close to the “real thing” than it’s gotta be pretty good. Right?
Right! I just finished eating a Xyla™ brand Healthy Chocolate™ sugar-free dark chocolate tasting square, and I thought it was delicious. The chocolaty flavors start out bold then the fruity, citrusy, and soft earthy notes show throughout. The texture is mostly smooth but there is an occasional gritty crunch of (I would guess) the xylitol.

You know how you get a favorite recipe and then over time you seem to forget about it as new things come along? Well this is one of those.
This chocolate raspberry mousse is easy to make and quite delicious, but it's probably been a couple years since I last made it.
