Chocolate Truffles

“There are four basic food groups: milk chocolate, dark chocolate, white chocolate and chocolate truffles.” This chocolate quote surely makes sense to all the chocolate lovers out there.

Chocolate truffles are an immensely delicious treat any time of day and any day of the year.  But did you know that they are named after the fungus, the fruiting bodies of underground mushrooms, because of their resemblance as it looks a lot like the dirt?

Chocolate truffles are typically made with ganache which is a mixture of chocolate and cream, but can also be made with centers such as mints and walnuts then served in variety of ways such as covering it with crumbled nuts, shredded coconut, or confectioner’s sugar. These may look intimidating but actually are very easy to prepare, the only difficulty you’ll ever have here is the dilemma of whether to grab another bite or not!

Chocolate Caramels

Do you know the feeling of the idiomatic expression “hitting two birds with one stone”? That’s what you get when you eat this yummy confection. Chocolate per se is heavenly, but try incorporating it into caramel and you are sent beyond heaven.

Just so you know, the milk products are the most important ingredients since it is the primary source of fat in caramel, which gives it that delightful texture. Milk is known to have a lot of nutritional benefits such as calcium which is good for the bones, and chocolate contains antioxidants that can help prevent cell damage. Suffice it to say, you are really on for a healthily delicious treat!

Anyone with a sweet tooth who gets to taste this would surely ask for more of these rich, chewy, fudge-like and melt-in your-mouth goodies. Also, this treat also makes for a delightful yet inexpensive gift!

Amaretto Chocolate Pudding

Chocolate pudding makes a great Summer-time dessert.  Well, it makes a great dessert any time of the year, but I like pudding in the Summer because it is served chilled and it's kind of a light dessert.  Eating it in the Summer just feels right.

A box of instant chocolate pudding is good, regular (non-instant) is better, and a pudding that is hooched up a bit is even better. 

Here's a chocolate pudding recipe that starts with a box for convenience, adds more chocolate for enhanced chocolate impact, and includes Amaretto liqueur for a nice almond flavor.  The whipping cream on top is a nice touch which you can enhance further by topping with a fruit or more chocolate.

Almost Fat Free Brownies

With all kinds of summer parties and other gatherings, it seems that it's really easy to over eat.

Wanting to enjoy all the good food, without the guilt, I found this recipe for almost fat free brownies.

This one uses a jar of prune baby food.  This is basically the substitute for the oil you would normally add.  Another substitution, if you have all the other ingredients handy and don't want to run out for pureed prunes, is apple sauce.

In fact, in many recipes you can replace some or all of the fat with apple sauce and get good results.  I have tried that with other brownie recipes and it works well, though the texture changes, sometimes resulting more fluffy cake-like texture than a dense brownie texture.

Chocolate Cinnamon Angel Food Cake

After dinner or in the evening of a hot day, you have that urge for something chocolate.  But you just don't want something heavy.

How about a nice chocolatety angel food cake?  Angel food is light and fluffy as well as having little fat and fewer calories than other desserts.

You could have a big piece and still have very little.  Good chocolate flavor without filling you up.  That makes it a perfect dessert for a summer night.

Chocolate Pops

Summer is heating up so it's time for a chocolate recipe that can help cool you down. 

In this recipe you're making a kind of smoothie and freezing it into a delicious chocolate popsicle.  Keep them frozen until you need a nice, cool, chocolatey snack.

Chex and Chocolate Party Mix

With the 4th of July holiday weekend coming up, it's time for a good party recipe.  Chex mixes are always good for munching.  This version is sweetened and has chocolate chips added. 

As far as I am concerned the coconut, peanuts, and raisins are all optional. The chocolate is required.  Modify the recipe to fit your tastes.

Sour Cream Chocolate Cake

Here's a delicious sour cream chocolate cake recipe.  The sour cream not only helps make this a moist cake, but the added fat also enhances the chocolate flavor in your mouth.

I'm also including a chocolate sour cream frosting recipe that you might want to use on top and between layers.

• 2 cups self-rising flour

Chocolate Margarita

Over the years I've seen several recipes for chocolate margaritas.  I've made one version in the past.  It was OK, though certainly not fantastic.

Here's a new chocolate margarita recipe that I just found on the Food Network website.  Since Summer has finally shown up in Wisconsin I'm thinking this will be a special treat this evening.  But I prefer blended Margaritas so I might try a variation on this.
