Most people just continue eating chocolate instead of ever really tasting it, never realizing why they like the flavor, never gaining true understanding.
But you can have it differently.
Here’s what changes when you go beyond that first experience:
Recognize flavor differences most people completely miss.
Learn why chocolates taste, feel, and finish differently.
Talk about chocolate without sounding forced, technical, or pretentious.
Know what you like, why you like it, and what to try next.
What you experienced in the tasting exercise wasn’t random.
It was the beginning of a structured process.
Most people never go beyond that moment. They notice something interesting, then they have no clear next step.
Chocolate University Online shows you exactly how to build on it.
"Chocolate University lessons are the best. Not only am I learning interesting and helpful information but the chocolate labs & weekly assignments are delicious!"
Sue - Yuma, Arizona
If the tasting exercise made you curious, this is how you build that ability step-by-step...
Each lesson builds on the last so your ability actually improves over time.
Every week for 40 weeks, you’ll receive an easy-to-read lesson with clear guidance and practical action steps. Most lessons are short, focused, and designed to help you enjoy chocolate while you learn.
You are not graded. You do not have to submit answers. You do not have to participate with anyone else.
This is a self-study chocolate experience you can complete from home, on your own schedule.
Learn how to taste and describe the flavors in chocolate, especially through the early tasting lessons.
Compare milk and dark chocolates so you can fine-tune your own preferences.
Understand key elements about chocolate and health without getting lost in myths.
Discover how chocolate can pair with wine and other foods for a better tasting experience.
Learn fundamentals like how real chocolate hardens properly without additives or refrigeration.
Find out what can go wrong when working with chocolate and what you may be able to recover.
And perhaps the best part? You get to eat your homework!

This didn’t come from theory. It came from years of working with chocolate every day...
In college, my studies made me a scientist and a teacher. I became a licensed biology teacher before my dream job and I came together in the same time and space.
I started working at Ambrosia Chocolate Company in quality control and later moved into research and product development. That meant lots and lots of chocolate tasting.
For nearly 10 years, I had my hands in chocolate, producing formulas for companies including Pillsbury, Nabisco, Good Humor, ConAgra, Edy’s, Mrs. Fields, and Quaker Oats.
The company trained me as a taster on their taste testing panel, and eventually I ran taste test panels for the new products we developed in our laboratory.
Now I take that chocolate knowledge and make it accessible to chocolate lovers who want to enjoy chocolate more deeply.
“Your ‘Flavor Attributes of Chocolate’ presentation was a great success! It was informative, entertaining and interactive with the audience.”
William - Athens, Georgia
“I have been a chocolate lover for some time but it is great to learn so much about it, and how to compare different types and brands. I could not resist eating my homework.”
Richard - Bayamón, Puerto Rico
“As a chocoholic, I crave both chocolate and my Chocolate University Online lessons.”
Jean - Waukesha, Wisconsin
You can keep guessing what you like… or you can actually understand it.
Inside Chocolate University Online, you follow a simple 40-lesson system designed to build your tasting ability step-by-step.
Most lessons are short and practical, so you can quickly move from reading about chocolate to actually experiencing it in a new way.
You’ve already taken the first step. This is how you keep going...
Here’s exactly what happens next:
I stand behind these materials completely.
If, within 60 days, you feel the classes are not worth it or you are dissatisfied for any reason, simply email me and we’ll issue a full and prompt refund.
That means you can start learning, tasting, and exploring chocolate without worrying that you made the wrong decision.
If the tasting exercise made you curious, this is how you take the next step...
Everything you learn will impact your appreciation of chocolate and help fine-tune your preferences.
I invite you to join me in class and begin turning your love of chocolate into real chocolate understanding.
Once you start noticing more, you’ll never experience chocolate the same way again.
See you in class,

Are there any "hidden costs" in addition to my membership fees?
Your credit card is processed through a third party and you will only be charged for those things that you requested.
Also, no other expenses are required!
That said, you should be aware that to get the most out of your learning, most lessons include an assignment.
While all assignments are optional (there's nothing you have to turn in), learning to taste and appreciate chocolate requires experience, so some chocolate purchases will be recommended.
In most cases these will be simple purchases at a local grocery store for just a few dollars at a time.
At other times, we will make other product or service recommendations that may enhance your experience. Of course you can always choose to forgo a tasting experience, and any other options, if the time or expense is inconvenient for you.
Does my membership include personal teaching?
It depends which membership(s) you select. If you are one of the elite students of our professional course then, yes, personal teaching is included for 3 months to help you get the most out of all of the material.
As a chocolate lover, joining through the offer on this page, you will be offered access to our Primal Chocolate Club. Members of this club do get personal access to my expertise. This is an additional membership program and the number of members is strictly limited. To get the extra attention you can enroll in, or get on the waiting list for, the Primal Chocolate Club. You can get more details on the Primal Chocolate Club in your regular lessons.
Outside of the professional class and the Primal Chocolate Club I simply cannot dedicate the time to personally teach each chocolate student. Even if every member just asked ONE simple question, it would be impossible to handle all of the requests. If the extra level of service is something you would like, the cost of the Primal Chocolate Club is quite low making it a great value. So consider that when it's offered to you.
With that said, I will always be available to handle support requests (e.g. "I can't download this week's lesson"). Communications and technology glitches can happen, and we're all dedicated to getting through any problems.
What if I miss a lesson?
Each lesson is delivered in an email that has a link to the lesson. Anytime after you get the email you can use the link to retrieve the lesson. They are never deleted. In fact, each lesson also contains links to all the previous lessons. This way even if you lose or delete one of the emails, you are still able to get to all lessons. Just wait for the next one to arrive.
So, whether you are out of town and can't get to your email, or you choose to let a few lessons accumulate before you turn your attention to them, the lessons are still there when you are ready. The flexibility is all yours!
Do I have to commit to the entire 9 months of weekly lessons?
No, certainly not. While I think you'll really enjoy the program, you may cancel anytime you want. You may either email me through the Contact Us link to the above left of this page or follow the link in the original payment confirmation email. You'll find instructions for a prompt and courteous cancellation. I don't think you'll want to cancel once you dive in to the training! But you can if you so choose.
Also if life gets in the way and you don't get to your lesson each week, that's not a problem. We're not grading you or keeping you on a schedule. Of course, we are on a schedule so we'll continue to deliver your lessons, but you can let them pile up and get back to them as soon as you are able.
With weekly lessons, what day of the week will I receive my emails?
There isn't a set day of the week when lessons will arrive to your inbox. Starting the day you begin, the email system is set to send out your lesson approximately every 7 days (sometimes there is a 24-48 hour difference in delivery, but you'll always receive a lesson for each week).
Sometimes there may be cumulative delays, causing the delivery day to slowly slip out. We compensate by sometimes scheduling the lessons at 6 day intervals. In any case, don't worry. You still only pay for 9 months and you will get all 40 lessons.
Can I buy a membership as a gift for someone else?
Yes you can. Your favorite chocolate lover will really appreciate Chocolate University Online weekly lessons.
To order as a gift, click the order link and provide your information as the billing information. When the billing is completed your billing email address will be used as the lessons delivery address.
We recommend you forward the email that contains the link to the first lesson to the gift recipient. After you do that, click the link at the bottom of the email that says, "Change Subscriber Options". When that page opens up, look for the link that says, "edit contact information." Click that link to update the email address and recipient name.
Can I share a membership with someone else?
Please don't. The lessons are copyrighted materials. Your payment covers the class itself, not books that you can share.
I have put countless hours into this work and charge such a low price that anyone can afford it. I understand it can be fun to work through the material with a friend. In that case, I would suggest you each have your own membership.
Just like going to a class at a physical brick and mortar university, if you want to have fun with your friend, you both need to enroll in the class. Thank you.
If you have a large group of friends, let me know and we could put together a group rate package for you depending on the size. Chocolate and chocolate lessons are more fun in a crowd.
Can I get college credit upon completion of the coursework?
While Chocolate University Online is quite educational, it is not associated with any accredited university program so it does not provide any credits toward any degree.
However, you will receive a nice certificate of accomplishment (which we refer to as the Chocolate University Online diploma). You can print and frame it with pride and show off to your friends!
