Across the nation, people flock to their nearby state and county fairs in the summer and fall. Whether you’re a life-long fair goer or a lucky tourist dropping in at the right time, adventure and excitement await you at the fair.

It's one of those activities you plan for, purchasing your tickets early, planning out what you're going to do when you get there, and so on.

When I was younger, that adventure and excitement used to involve fancy rides, light-up toys, and hard-won teddy bears, but as an adult - it's all about the food.

Now, my fair-going checklist involves one main thing: be sure you arrive on an empty stomach.

Chocolate is in fact, a state fair staple. Food vendors have fun coming up with the best new chocolate creation year after year. We have seen a recent trend towards bacon concoctions, but don't forget what I said earlier about trends.

So, without keeping you waiting, here are the chocolate fair foods that I would most like to try:

The "Muddy Pig"

This concoction is featured at the Ohio state fair this year. It's chocolate-covered bacon on a stick topped off with a candied cherry.

Chocolate Jalapeño Ice Cream

Featured at the Minnesota state fair, this blend of ingredients is super intriguing. I've heard of chili pepper chocolate bars, but never chocolate ice cream blended with jalapeño pepper bits!

Maple & Bacon Glazed Chocolate Buttercream-Filled Long John

The title says it all. The Wisconsin state fair is doling out this gourmet donut creation. This is the trifecta, folks - maple, bacon, and chocolate?! Yes, please.

"Chocolate Blitzen" Cocktail

The Wisconsin state fair deemed this ice cream based cocktail as a recipe contest winner in the chocolate beverage category. Ingredients include Irish cream liqueur, crème de cacao, chocolate ice cream, and more. You can actually see the recipe here and try it out yourself!

Deep-Fried Starbucks Coffee

How is that possible, you ask? At the San Diego county fair, they've taken Starbucks brand whole coffee beans and chocolate chips, and rolled them in a sweet pastry dough. Then the balls get deep fried, rolled in sugar, and served with whipped cream. Yum!

S'mores-Stuffed Chocolate Chip Cookie Dessert

Ok, this is another San Diego county fair dessert, but it sounds so good I couldn't leave it out! They take a layer of chocolate chip cookie dough, add some Hershey's chocolate, toasted marshmallows, graham crackers, and another layer of cookie dough. Then, it's baked and served à la mode, and topped with hot fudge.

Chocolate Tamales

Newly featured this year at the Arkansas-Oklahoma state fair, these are real tamales getting a chocolate makeover. The tamales are wrapped in chocolate, covered in nuts and cherry pieces, then baked in a tightly packed corn husk. The end product is similar in taste and texture to a fudgy no-bake cookie.

Fried Chocolate Maple Bacon "Amazeballs"

Leave it to Texas to name something "amazeballs". These fried treats start out with chocolate cake mixed with creamy chocolate frosting, maple syrup, and bacon pieces. They're then deep fried, dusted in powdered sugar, and drizzled with chocolate and maple syrup. Finally, they're topped off with more bacon.
