White Chocolate “Take-Me-On-a-Picnic” Truffles Recipe

Spring provides us with perfect picnic weather. It's not too hot out yet to melt the food, or you, and with any luck the bugs will still be keeping their distance! All you need for the perfect spring picnic is a light jacket and a plan.

Picnics can serve so many stress-relieving purposes. You can connect with a group of family or friends, or even go it alone. You can relax in the sun, tan, read, watch the sunset, play some Frisbee... the possibilities are endless. And, for the evening, it seems like Spring is also endless.

Did you know that in the past, picnics have been utilized for political protests? One well-known situation was the Pan-European Picnic which was held on both sides of the Hungarian and Austrian border on August 19, 1989 as part of the struggle for German reunification. Masses of people temporarily occupied a significant portion of this public territory in support of a unified Germany.

In the year 2000, a picnic took place from coast to coast in France, stretching 600 miles long, to celebrate the first Bastille Day of the new Millennium. Here in the United States, we enjoy picnics traditionally on the Fourth of July, whereas Italy's favorite picnic day is Easter Monday.

There are all sorts of picnic contraptions on the market today, but don't fret if you don't have any of these new gadgets and gizmos. All you need is a place in mind with some beautiful, natural scenery, and a little pack of your favorite treats.

That's where these white chocolate truffles come into play. They won't take up too much space, and they'll keep cool with the help of some ice or a freezer pack. Viola! The perfect little picnic take-along.

White Chocolate Truffles

  • 1/4 cup butter
  • 1/2 cup powdered sugar
  • 1 teaspoon almond extract
  • 1 egg yolk
  • 8 ounces white chocolate, broken into small pieces
  • 1 cup chopped blanched almonds, lightly toasted

Melt chocolate and butter in the top of a double boiler over low heat, stirring constantly. Remove from heat. Add sugar, egg yolk and almond extract; beat with an electric mixer until smooth. Transfer to a shallow glass casserole dish. Cover and refrigerate 1 hour.

Shape mixture into 1-inch balls. Roll in almonds.

Cover and refrigerate at least 8 hours. Place in miniature foil cups at room temperature to serve. Store in air-tight container in refrigerator.
