Earth Day Chocolate Cake Pops Recipe

Chocolate Earth Day Cake Pops

  • 1 1/2 cups chocolate frosting
  • 1/2 cup marshmallow fluff
  • 1 box any chocolate cake mix
  • Large mixing bowl
  • Egg carton, or tall glass 3/4 full of dried beans
  • Lollipop or Popsicle sticks

Follow the instructions to make the cake, and allow it to cool. Cut the outer edges from your cake because they can create hard lumps inside your pops. Crumble the cake into fine crumbs. Mix in chocolate frosting and marshmallow fluff. You want it just moist enough to roll into balls, so if your cake recipe is moist already, use caution when adding frosting. Use your hands or a small rounded scoop to get enough mixture for a ball.

Roll the ball in cupped hands and apply gentle pressure until you are pleased with the shape. Melt the chocolate chips. Dip sticks into the melted chocolate and then insert into each cake ball. Stick the cake balls into a glass full of dried beans or the bottom side of an old egg carton so that they are standing upright. Freeze for 1 hour.

Dip each cake ball gently into melted chocolate, tapping away the excess. Allow to cool. Decorate with green and blue frosting to mimic the look of continents and water.

Makes about 40 pops.
