Soft Chocolate Caramels

What do homemade caramels remind you of? Me, it specifically reminds me of times when my siblings and I gathered around and just ate whatever we wanted. But today, I can eat some any day of the week.

I always go for my mother’s caramel recipe for the most part though. This time, I want my caramels more chocolatey. Little did I know it would be as easy as adding chocolate to the initial caramel mixture. I went with a different recipe and the end result shocked me.

Delicious is an understatement. I think I just died and went to soft chocolate-infused caramel heaven. Seriously though, these caramels are beyond phenomenal. The creamy, dreamy chocolate transforms these caramels into a chewy, fudge-like consistency. They’re caramel-y alright, but still deepened to a rich, decadent consistency that blew my hair back.

Soft Chocolate Caramels

• 1 cup sugar
• 9 ounces fresh heavy cream
• 2 ounces cocoa powder
• 1 1/4 ounces honeyCook together in a copper pan (or a pan not lined with tin) until the mixture reaches the 'ball' stage. (To test the stage of the cooking by finger, dip the thumb and index finger into cold water, then into the mixture, bringing the 2 fingers together and dipping them again into water. This should be done quickly to avoid burning. The mixture forms a small ball that can be rolled with the tip of the fingers.) Pour this cooked sugar onto an oiled marble slab, keeping it at an even thickness of 2/3 inch, using 4 oiled rulers to make a framework. Let cool and cut.
