What Is Ruby Chocolate?

Have you heard about the new type of chocolate called ruby chocolate? What is it? And what makes it different from other types of chocolate? Let’s find out.

Ruby chocolate is unlike any other chocolate you’ve tried. It is pink in color with citrusy and berry flavors. Back in 2004, Callebaut claimed they had discovered a new type of bean called the ruby bean. However, ruby chocolate was only first revealed in 2017 the same Belgian chocolate manufacturer.

How was Ruby Chocolate discovered?

According to Callebaut’s story, one of their cocoa experts discovered that unique components, naturally present in cocoa beans, produce chocolate with an exceptional red-pink color and fruity taste. They also claim that the color is natural and not an added food coloring and that these certain cocoa beans are found in Brazil, Ecuador, and the Ivory Coast.

After the launch, chocolate experts found out that ruby chocolate was in fact made with regular but unfermented cocoa beans that naturally have red-pinkish color. And for the final chocolate product to be pink, the cocoa itself must be very pink to start with. So, they concluded that to maintain the pinkish color, one must use fruitier, unfermented cocoa beans treated with acids.

In the traditional processing of cocoa beans, during the fermentation stage, the beans are deep red and intensely sour, but the sourness will be gone as the beans are put out to dry. However, to create ruby chocolate, the unfermented beans are treated with an acid for 24 hours or more to maintain their vibrant red color. When you mix these red beans with white cocoa butter, you will finally have ruby chocolate!

Therefore, it’s possible that you can create ruby chocolate using any type of cocoa beans from around the world if you add citric acid.

What does it taste like?

It’s similar to white chocolate in terms of its creaminess and texture, but ruby chocolate tastes sweet and tart, with a fruity taste. Also, it has more cacao content than white chocolate! Ruby chocolate contains 47.3% cocoa solids, while some white chocolates have at least 30%.

Have you ever heard about Ruby KitKats? It’s the first ruby chocolate product that was launched by Nestlé, and reviews said they smelled like perfume with a hint of fruit. Even though ruby chocolate has been present for a while, it has not yet reached a lot of chocolate enthusiasts around the world.
