avatarCoconut Pecan Brownies

By Joanna Maligaya on January 23, 2013 | Comments (2)

Let me feed your brain first, OK? The term “coconut,” is of Spanish and Portuguese origin. The term was derived from the word “coco,” meaning “monkey face.” This is allegedly because Portuguese and Spanish explorers found a resemblance between a monkey’s face and the base of a coconut.

Coconuts are the fruit of the coconut palm, scientifically known as cocos nucifera, and the word nucifera means “nut-bearing.” The fruit-bearing palms are native to Malaysia, Polynesia, and southern Asia, and are now also abundant in South America, India, the Pacific Islands, Hawaii and Florida.

The mix of coconut and pecans in this recipe is just so scrumptious that it can make you forget there’s a brownie underneath it.

I won’t go further, here it is!

Coconut Pecan Brownies

• 21.5 ounce fudge brownie mix
• 1/2 cup water
• 1/2 cup oil
• 1 egg
• 1 can coconut pecan frosting
• 1 cup sour cream
• 1/2 cup chopped pecans
• 1/2 cup mini chocolate chips

Preheat oven to 350°. Grease bottom (only) of 13×9-inch pan. In large bowl, combine brownie mix, water, oil and egg. Beat well. Add frosting and sour cream; mix well. Spread batter in pan. Sprinkle pecans and chocolate chips evenly over top. Bake for 42-52 minutes (until toothpick comes out clean). Cool completely. Cut into bars.

Enjoy! :)

Many grocery stores should sell this. Betty Crocker, Pillsbury, and Duncan Hines all make a coconut pecan frosting. Here’s an option at Amazon. This link is to an 8-pack, but at least you’ll see an example.
