Disappearing Marshmallow Brownies

I have been using my oven more than I usually do, but I ain’t complaining! This dessert is outrageously decadent & comforting any day of the week.

Moist fudge brownies with marshmallows. It’s not a true “brownie”, though, it’s a blondie!  Stopping while there’s still some left in your plate is almost impossible! It’s sooo rich, so a glass of milk or coffee might come in handy!

You could always decide to throw some extra ingredients into a box of brownie mix and come up with something new yet a little bit generic. Or, you can really kick it up a notch and try making these Disappearing Marshmallow Brownies from scratch.

Disappearing Marshmallow Brownies

  • 1 cup butterscotch chips
  • 1/2 cup butter or margarine
  • 2/3 cup brown sugar
  • 1 1/2 cup flour
  • 1 teaspoon vanilla
  • 2 teaspoons baking powder
  • 1/2 teaspoon salt
  • 2 eggs
  • 2 cups miniature marshmallows
  • 2 cups semi-sweet chocolate chips
  • 1/2 cup nuts, chopped

Melt butterscotch chips in heavy pan over medium heat. Remove from heat and cool. Add brown sugar, flour, vanilla, baking powder, salt and eggs to butterscotch mixture. Mix well and add marshmallows, chocolate chips and nuts. Bake in 9x13-inch baking pan at 350° for 20 to 25 minutes.

    I found that adding the brown sugar makes much too sweet, so I deleted it and as far as I am concerned made it much better.
