Clementine Chocolate Lava Cake Recipe

A chocolate lava cake (also known as a molten chocolate cake) is a combination of a flourless cake and a souffle. The name is a perfect description of the liquid chocolate center that makes this cake so decadent!  

But what's better than a delicious, gooey chocolate lava cake? A delicious, gooey, orangey chocolate lava cake that can be made in just 15 minutes!

With the first day of winter around the corner, warm up with this easy lava cake recipe I found, previously posted by Eric Kim.

Clementine Chocolate Lava Cake

  • 4 ounces dark chocolate (60% cacao or more)
  • 2 large eggs
  • 1/2 cup sugar
  • 1 pinch salt
  • 1 teaspoon vanilla extract
  • 1/2 cup olive oil
  • 1 clementine, zested
  • powdered sugar (for garnish)

Start by preheating the oven to 400 degrees F, then lightly grease four 6-ounce ramekins. Place those on a cookie sheet.

Next, carefully melt the dark chocolate in the microwave (in 30 second increments and constantly stirring so you don't burn it). When melted, allow to cool slightly.

In a separate bowl, combine the eggs, sugar, salt, vanilla, clementine zest, and olive oil. Whisk until fully combined and fluffy. Then fold in the melted chocolate.

Lastly, pour the batter into the ramekins and bake for 10 minutes. The tops should look slightly cracked while the insides remain nice and gooey. For presentation, dust with powdered sugar immediately before serving.
