Chocolate Peanut Butter and Oats Energy Balls Recipe

What you need:

  • 1 cup rolled oats
  • ½ cup ground flax seeds or 1 tbsp chia seeds
  • 1 cup creamy all-natural peanut butter (warm)
  • 2 tbsp unsweetened cocoa powder or 3 oz high-quality craft dark chocolate bar
  • 2 tbsp maple syrup or agave syrup (or honey)
  • Optional: 1 cup unsweetened shredded coconut
  • Optional: 1 tbsp vanilla extract
  • Optional: ¼ cup chopped berries

What to do:

Combine all ingredients in a large mixing bowl and mix until dough is firm enough. If the mixture looks too wet, add more oats. If it’s too dry, add more maple syrup or peanut butter.

Place in the refrigerator for at least 15 minutes so the dough is firm and easier to roll. Then wet your warm hands and scoop about 2 tablespoons or 1 inch and roll between your palms or a hard surface to form balls.

That’s it! Consume immediately or store in the fridge for up to 1 week or up to 3 months in the freezer.

Bonus tip: Dip the chocolate balls into melted extra dark chocolate for extra layer of chocolate. Yum!

That was easy, huh? You can also place the mixture in a square pan, refrigerate, and cut into chocolate bars!
