BarkThins Dark Chocolate Coconut with Almonds

I have to be honest. Staying at home during the corona virus pandemic is leading to weight gain! Seems that “snacking” has become a new hobby of mine. I try to snack in the best way possible, if that’s possible.

I’ve been creating my own snacks by making healthier substitutions in the traditional recipes.  I counter balance with exercise (I love getting out for a bicycle ride) and I eat nutritious, healthy meals. Yet, there’s something so attractive about reaching for a ready-made, crunchy, sweet and salty something that takes over my rational mind.

Today I’m snacking on BarkThins Dark Chocolate Coconut with Almonds. It says “snacking chocolate” right on the package so I take it as a sign that it’s the right thing to do today!

The bark is sweet, salty and crunchy - perfect for satisfying my craving. As the name implies, the pieces are small and thin, like bark from a tree. I assume it was designed that way as a kindness to keep me from eating too many at a time. Encouraging me to pace myself and practice portion control. Oh come on, like that’s going to happen!

I really like of the flavor combination of chocolate and coconut. When I was a kid, my mom would buy a Mounds bar and share it with me. A bit older, I would eat all the chocolate covered coconut creams in the box of Whitman’s Sampler at Christmas. Ah, the sweet tooth of a youngster. I don’t enjoy those super sweet confections anymore. Fast forward to adulthood, and I would much rather eat these BarkThins instead. Oh, I would also eat a Theo 70% dark chocolate coconut bar in a heartbeat!

The BarkThins Dark Chocolate Coconut with Almonds snacking chocolate is gone in a flash. Not sure there’s anything left for my quarantine partner. Maybe he won’t even notice? Oh come on, like that’s going to happen!
