CocoVaa Chocolatier – Chocolates Review

I want to say that I had a great start to the New Year with some amazing chocolates. But the assorted box I got for Christmas never made it to the New Year (why would it?). I probably should say it was a spectacular way to end 2018! Either way, I had a memorable chocolate experience courtesy of CocoVaa Chocolatier. Thank you, CocoVaa!

In a world of many outstanding small batch chocolatiers, it’s fun to focus on one in my home state. Such a place exists in my state’s capital city – Madison, Wisconsin – not too far from where I live. It’s new, it’s small (the owner would say “nanofactory”) and it’s award winning.

CocoVaa Chocolatier was voted one of 2018’s Top Chocolatiers and Confectioners in America as rated by the International Chocolate Salon, and won the “Grand Master Chocolatier” award.

According to her website, www.cocovaa.com, chocolatier Syovata Edari walked away from a 15 year career as a trial lawyer to pursue her passion for chocolate and flavor creation. Her business took off in 2016 and has been her full time job ever since.

My Box of CocaVaa Chocolates

Wanna know what was in my marvelous box of chocolates? Warning! The reading of the following might cause drooling:

Moroccan Mint... Fresh spearmint, peppermint and green tea infused into creamy milk chocolate ganache.

Salted Caramel – Number 2... Caramel infused with Madagascar vanilla bean and finished with Maldon sea salt and encased in a caramelized white chocolate.

Earl Grey... Bergamot tea infused into 65% Peruvian dark chocolate ganache.

Morello Cherry Caramel... Caramel made with Morello cherry puree encased in 68% dark chocolate.

Salted Caramel – Holiday Edition... Caramel infused with Madagascar vanilla bean and finished with Maldon sea salt, encased in 68% chocolate.

Turkish Coffee... Strong and bold flavors of Venezuelan chocolate infused with espresso and cardamom.

Persian Saffron... Persian saffron and Madagascar vanilla bean infused into heavy cream then blended into premium white chocolate and encased in 68% dark chocolate.

Some of My CocoVaa Commentary

There are a couple of things I want to mention regarding certain chocolates...

...The Morello Cherry Caramel is the most unique chocolate I’ve ever tasted and currently sits at the top of my “Favorites” list.

...The salted caramels are very salty, bordering on too salty for my liking. But I do like that the salt is blended into the caramel and not stuck on the outer shell in rock form.

...The Turkish coffee is amazing, and I might need a whole box of that single flavor sitting next to me at work.

...The Earl Gray is certainly delicious but sorry, CocoVaa, another Madison chocolatier remains my gold standard on this flavor (Gail Ambrosius’s Earl Grey truffle).

There are so many more CocoVaa varieties for me to try. But hey, it’s the very beginning of 2019, and I always make a New Year’s resolution to eat more chocolate. Why should this year be any different?
