Equal Exchange 80% Dark from Panama

I eat chocolate bars from Equal Exchange all the time, and I assumed that I reviewed them as I consumed them. I was wrong! It’s been a while since I’ve reviewed one of their bars, so I aim to correct that. Today’s review is a single origin, 80% dark chocolate, made from the cacao beans grown in Panama.

Tasting Panama Extra Dark

This 80% is crafted without the expected bitterness of a very high percentage chocolate. You’d swear you were eating a 70%. (Yeah, I know, for those of you who do not appreciate dark chocolate, you might not recognize the difference between 70% and 80% dark. However, if you are a dark chocolate lover, there's generally a big difference between the two! From 70% to 80% you can lose one third of the sugar content, and that's noticeable.)

The aromas are nutty (pecan, I think) and fruity like a current jelly. The snap is hard and crisp, and the melt is slow and even. The deep chocolate flavor is released throughout with a hint of coffee and honey in the middle. And it's nutty, like a Brazil nut, at the end. There is a combination of acidic and bitter notes for an aftertaste, but like I said earlier, the bitterness isn’t very strong, and it certainly doesn’t remind me of a typical 80%.

    Are the higher cadmium levels being addressed, how, and when can we expect to see a lower cadmium level in this bar? Because I really do like this chocolate.
